65-Year Old Wins in Parklane’s ‘Sangka sa Kaha’ in Oslob

Aside from bringing out the best places and leisure in Oslob, Oslobanons have introduced to us one of their delicacies, “podrida”, through a cooking competition marked as “Sangka sa Kaha” last  October 6, 2013. The event was held simultaneously with the Sugbu Triathlon, hosted by Cebu Parklane International Hotel.

65 year-old Oslobanon Erlinda Butron, won the cooking competition where she cooked two flavors of podrida: with raisin and with grated coconut meat or “Bukayo” (caramelized coconut shreds). Using a PVC pipe as a rolling pin, plywood as her pastry board and a wooden oven (hurnuhan), she made her own version of the delicacy to the best of her ability.

Dalaga pa ako sukad nagsugod ko og luto ani.. Dugay-dugay na dyud ko nagsige og himo ani kay daghan man pud mu-order ani labi na kung pista.. “ said Butron. (I started cooking podrida since I was a teenager.. it has been a long time since I’m making this because I have a lot of orders especially fiesta)

  Although  a challenge posted her by forgetting her molding materials during the competition, she still finished the podrida on time.

 “The dough is perfectly baked that is why the result is perfectly chewy in the center with slightly crispy edges…. The first time we tasted it, we already know that her podrida will win the contest..” said the judges to MetroCebu News.

 A podrida is cookie look-a-like but is a sandwich with grated coconut meat inside it, raisins or pineapple chunks. It tastes like cookies but it varies based on the flavor of the dough. The savory of podrida will make the people want it. The grated coconut meat in it is the mark of the classic podrida of Oslob.

The ingredients in making podridas are flour, baking powder, grated coconut meat, raisins or pineapple chunks, margarine, pork fat and egg yolks.

 Aside from podrida, Butron also makes torta and rosquillos and accept orders for it. When she is not having orders, she works as a barangay health worker in Poblacion, Oslob.

 The Sangka sa Kaha was organized with the aim to feature different delicacies of the provinces of Cebu. And, Os;ob was the fourth-leg which highlighted podrida of Oslob.
