Parklane Features New Delicacy, Awards Best ‘Takyong’ in Borbon, Cebu

As part of their efforts to be a hotel that stands for Cebu, Cebu Parklane International Hotel traveled to the municipality of Borbon for its fifth leg of ‘Sangka sa Kaha’, a friendly cook-out competition among locals to promote the town specialty.

Parklane’s ‘Sangka sa Kaha’, this time, took place at the town hall grounds of Borbon to fire up gastronomically adventurous delicacy, the “Takyong”. Five teams from the town’s 19 barangays bouts for the title.

‘Takyong’ Cook-Out Competition

Parklane recently awarded the teams having the most delectable “Takyong” dish. Representing the barangay of Lugo, Cajel, Claveria and Laaw, the team of Mary Jane Condisa, Mary May Condisa and Gracenita Montegrande have impressed judges’ taste buds with their “Takyong with Honey”.

The best of town’s cooks were tasked to come up with the best “Takyong” recipe, prepared a range of “Takyong” dishes – such as “Takyong guisado”, “Ginataang Takyong”, “Mechado-style Takyong”, and “Takyong with Lemon”.

Dish made from “Takyong” is a delicacy not only among the locals but also among visitors. The main ingredient, again, is the “Takyong” – snail. The snail is first boiled to cook, and then sautéed with a variety of spices. Its meat may be prepared and served as pate, grilled or stewed.

There have been several variations in the delicacy’s preparation. One is cooking it in coconut milk; another is frying it with mixed vegetables; yet another is stewing it “caldereda” style. As characteristic of the ingenious Philippine cuisine, the culinary possibilities and potentials of this Borbonanon specialty are overflowing.

Takyong can be found in bushes or short trees, like coffee or jackfruit. It feeds on the sap and algae of the leaves of trees and bushes growing in elevated areas where the climate is cool. They are vulnerable to ants, which prey on them when they fall to the ground.

The locals find “Takyong” to be a clean snail. They are “harvested” up at a tree or foliage habitats, and not picked from the ground.

The winning “Takyong” dish will be included to the Parklane’s Kan-anan Restaurant, a restaurant that specializes in Cebuano cuisine.

Kan-anan restaurant is located at the 4th floor of the Parklane hotel along N. Escario Street, Cebu City.
