Eat Like a Nutritionist
Get a sneak peak at the healthy meals a nutritionist eats throughout the day for better beauty.
Even though Keri Glassman, R.D., has a jam-packed daily schedule, juggling kids, clients and media interviews, it’s no surprise that the nutritionist doesn’t cut corners when it comes to healthy eating throughout the day.
Breakfast: Avocado Toast
After getting in a workout (running, strength training, yoga or indoor cycling) before her kids are up, Glassman is out of the shower and ready to conquer the day by 7:30 a.m. For breakfast, she makes her own avocado toast, which is a hot food trend: Ezekiel toast with 1/3 of an avocado, 2 tomato slices, a sprinkle of sea salt and some black pepper.
Snack: An Apple With Nut Butter
Between meetings around 10:30 a.m., Glassman fuels up with a quick snack, usually 1 sliced green apple with a Justin’s nut butter packet, which fills her up thanks to the fiber in the fruit and the healthy fats in the nut butter.
Lunch: Chopped Jalapeño Kale Salad
If she’s in her office, around 1 p.m. Glassman dives into her favorite chopped jalapeño kale salad, which is loaded with vegetables: chopped kale, sunflower seeds, chickpeas, broccoli, asparagus, red peppers, jalapeños, olive oil and lemon. “I eat slowly and savor every bite,” she says. Snack: An Egg and a Handful of Nuts
Around 4 p.m., she grabs a snack to give her enough energy to get through the last part of the day: 1 hard boiled egg, 10 almonds and either a green smoothie (spinach, kale, cucumber, celery, ginger and lemon) or a cup of green tea.
Dinner: Salmon With Vegetables
At home, dinner includes a protein, like chicken or fish, with two delicious vegetable sides, such as: Grilled salmon, a tomato and cucumber salad, and a side of roasted cauliflower. “I always have crudité on the table to start and a healthy grain like amaranth,” says Glassman, who pairs her dinner with a glass of wine.
Dessert: Dark Chocolate + Chamomile Mint Tea
Like most of us, Glassman likes to end the last meal of the day on a sweet note. So she opts for a healthy but sweet treat after dinner, which is usually some kind of dark chocolate and sea salt combo—a solid choice since dark chocolate is loaded with benefits, from younger-looking skin to a healthier heart. “And then around 10:30 p.m., I sip chamomile mint tea while trying to make it through more than three pages of a novel before I pass out!” she says.
