Award-Winning Chef Graces Brique’s New Dishes
Award-winning and renowned New York City chef, Noel de la Rama, Graced us with his presence at BRIQUE last August 22, 2015. Chef Noel gave a small talk on his culinary philosophies and techniques before unveiling 6 new dishes which will be added to the restaurant’s selection of food.
Chef Noel puts a strong emphasis on cooking with what is readily available and whatever is in season. To him, cooking with only the freshest ingredients brings out the best flavors and textures that food has to offer. Among the 6 dishes Chef Noel curated for Brique is the Tropical Crab Sandwich — a dish made with fresh crabs, sourced regularly from our very own province of Bantayan.
(L) Bacon, Corn, and Potato Chowder and (R) Truffled Chorizo and Mushroom Pasta
After his presentation, Chef Noel then served small-sized portions of each dish — giving a glimpse of what Cebuanos can expect in the near future. It was no surprise that every sample he served offered a whole new dimension of flavor; after all, Chef Noel attended The Culinary Institute of America, The French Culinary Institute, and has over 30 years of experience under his belt.

Brique is a restaurant that offers modern cuisine with a rustic touch.
