I know this is quite uncommon here in the Philippines but I have been testing a lot of different dishes with what we call “guacamole.”

Right now, there is a great deal on avocados at 55 pesos per kilo, so it would be a shame if you did not at least try this tasty and delicious dish. This dish is commonly made for parties in the West and is always a favorite by most people who like avocados. Pay special attention on how to make this.

Avocados: Make sure they are the small ones with very dark skin – not the big ones with bright green skin, those contain so much water and are always very hard. The ones with the dark skin are currently in season, and ready to buy at your local supermarket.

How to pick avocados:

Make sure they are not hard at all. Look for the ones you can put a “thumb print” in, but not one that is so soft that it is rotten. Picking the right avocado for guacamole is a talent, but one you should acquired if you are going to making this dish taste the best way it can be made.

Instructions: (If you wish to make more servings, just double or triple the recipe.)

1. Peel 2 avocados and put them into a small bowl.
2. Chop up the avocados with your spoon or fork into smaller chunks.
3. Chop up one half of a small onion into very small pieces – “small” not “medium” pieces.
4. Put the onion into the bowl with the avocados.
5. Chop one calamansi into 2 pieces and squeeze both pieces into the avocados. This will give the avocados a citrus flavor.
6. Put a pinch of salt and a pinch of pepper into the bowl. This is totally up to you. I do a few shakes of both. I like to have a decent amount of salt but not too much.
7. Take a fork and mash up all of the ingredients in the bowl really well. Do not stop until all of the chunks are gone. Make very mushy. If the avocado is too hard, then it will not get as mushy as you want. So keep on pressing the fork over and over against the ingredients over and over and stirring.
8. Test it with a cracker or with something you love to eat. Guacamole is not something you want to really eat without something yummy.

Try the guacamole with:

1. Pancit
2. Pork Chucks
3. Adobo
4. Chips
5. Beef or Chicken Sticks
6. Anything, really.

Take a knife and put on your favorite dish, bite by bite.

I know in the Philippines, we have avocado milk shakes but in the US, we use it as a spread or as a topping to a great tasting Mexican dish. You should try it. Today we had it with pork slices and also in pancit and we loved it.
